Seafood products are highly perishable. Therefore, such a product needs to be processed and/ or packaged right way in order to maintain their quality and safety. Consumers like fresh seafood products that have undergone minimum processing and maintain their original quality characteristics. Information about advanced seafood packaging technology is provided in this chapter. Seafood products have been successfully packaged using modified atmosphere packaging, active packaging and intelligent packaging.
