Abstract

Fenugreek leaves are one of the healthiest green leafy vegetables. They have many health benefits and medicinal properties such as antidiabetics, anticarcinogenic, antioxidant etc. Fenugreek is a versatile herb and commonly cultivated as an annual herb from the Leguminosae/Fabaceae family. It has vastly been used in cuisines as a flavouring agent due to strong flavour and aroma for over the decades. Fenugreek also grows well under diverse and a wide range of conditions, it is moderately tolerant to drought and salinity, and can be grown on marginal lands in profitable way.
