The chapter revolves around the local potato varieties being cultivated in Assam. Potato is an important tuber crop grown during winter season. Though number of improved table cultivars of potato are being introduced in Assam, the indigenous potato cultivars remain the more preferable ones among the consumers. The reason being the lesser cooking time with enriched taste, longer storability and more nutritional value. Hence, a study has been made regarding the preservation requirements, zero tillage in potato and the common Indigenous Technical Knowledge (ITK) followed in the region. A brief study has also been done on cropping systems followed, post-harvest handling and storage of potato.
