Abstract

The demand for easy-to-cook, ready-to-eat vegetables is increasing with time. In India 600 traditional/wild species documented were important source of food and nutritional security, medicine, cultural and economic importance. Celosia argentea is one of the traditional green leafy vegetables of Nalgonda district, Telangana state. It is commonly known as plumed cockscomb. The plant is a leading green leafy vegetable in various parts of the world. It is an important leafy vegetable with high nutritional value and so, various parts of the plant are used. The present study has developed different formulations (0, 10, 20, 30, 40 and 50%) of Celosia argentea leaf powder incorporated instant chutney powders. Based on the sensory analysis, 50% leaf powder incorporated chutney powder was selected for the further consumer evaluation with 100 individuals of different age groups. The study found that the developed product was best accepted by the consumer of different age groups in all the attributes.
