Food preservation is an act of maintaining food properties for utilizing food at its maximum benefit. Appropriate food preservation techniques should be used to prevent food wastage. There is a large variety of food preservation techniques available across the world these days. Each technique has its importance on key factors on food wastage like microbial proliferation, enzymatic and chemical reactions, and physical damage. But understanding the effect of the preservation technique is important because each step of preservation including handling, processing, storage, distribution, etc. brings many changes which can be desirable or undesirable14. One of the main goals of food scientists is to make the food safe for consumption whether it is used as fresh or processed. The proper application of food processing and preservation techniques helps to prevent the outbreak of foodborne illness or disease. According to Potter and Hotchkiss, (1995)16, Nowadays there are several techniques are being developed for gratifying the demand of customers and producers such as economic preservation, and nutritional and sensory preservation of food.
