Abstract

Environmental pollution and food safety are two of the most important issues of ourtime. Soil and water pollution, in particular, have historically impacted on food safety which represents an important threat to human health. Consumption of food crops contaminated with heavy metals is a major food chain route for human exposure. Soil pollution alters soils’ biodiversity, reduces soil organic matter and soils’ capacity to act as a filter. The increasing negative effects on food safety from water and soil pollution have put more people at risk of diseases.
