Abstract

Underutilized leafy greens are an important element in rural villages (specifically among some tribes) Because they are a rich source of nutraceutical ingredients and phytonutrients, underutilized leafy greens constitute a vital component of a balanced diet in West Bengal's rural communities (particularly among some tribes). Additionally, they are an excellent provider of minerals, carbohydrates, protein, and vitamins. Because of their more nutrient and phytochemical concentration, leafy green vegetables are recognized as a useful group of nutrient-dense foods, affordable sources of nourishment, and potential herbal treatments. Investigations on underutilized wild leafy greens could help strengthen food security in rural regions by supplying information essential to policy development on the exploitation of biodiversity for human sustenance (Modi et al., 2006). However, the majority of our nation's traditional and rural green vegetables are still underutilized (Arunachalam et al., 2007).
