Fruits and vegetables are essential for health but are prone to spoilage, leading to significant economic losses. This chapter explores the use of metal-organic frameworks (MOFs) in food packaging to extend shelf life by adsorbing and desorbing ethylene, a key factor in ripening. MOFs offer excellent gas adsorption properties, making them ideal for maintaining freshness. Recent advancements in MOF-based packaging, such as Trupick, demonstrate their potential in preserving the quality of produce by efficiently controlling ethylene levels. This innovative approach could revolutionize food packaging, enhancing product safety and reducing waste.
