Abstract

The chapter provides majorly a review about the high protein-rich source-Soybean. Soybean, also known as Glycine max, is the world's most significant bean, supplying a diverse spectrum of vegetable proteins. Soybeans in nature do not require synthetic fertilizers since they have a natural symbiotic relationship with the Rhizobium bacteria. This connection produces organic proteins directly from the nitrogen content of the surrounding atmosphere, hence reducing the need for commercial nitrogen-based fertilizers. Grain legumes are grown largely for their seeds, which are high in both calories and protein. They supply humans with protein as well as energy as a diet. It not only contains about 48 to 50% proteins but is also rich in other nutrients like folate, potassium, iron, copper, magnesium, phosphorus, etc. Short comprehensive literature including the substituents and foods that are rich in soy have been listed followed by its benefits. It has many positive effects on the human body, protecting us from various illnesses resulting in our well-being. Other aspects such as bioactive compounds of Soya are also covered.
