Abstract

The application of biotechnology is very helpful in generating nutritionally improved food crops from the past 20 years. One of the main causes to the global burden of disease are the lack of essential vitamins and minerals in people’s diet. Depending on high calorie diets is the major reason for high malnutrition rates especially in India. So, to complement existing interventions, a new tool called biofortification is approached which means the breeding of crops for higher contents of vitamins and minerals. This chapter gives a brief overview about the various methods of biofortification to fight against malnutrition. These new approaches with essential micronutrients are very beneficial for the poor people in terms of both health as well as economics.
