Potatoes are an important crop in Asia and Europe, in particular in Northern and Eastern Europe, where per capita production is higher in all countries. It is the third most important food crop in the world, after rice and wheat in the United States. Potatoes are eaten by more than a billion people around the world, and the global annual production of crops exceeds 300 million metric tonnes. Potatoes contain various bioactive compounds such as starch, dietary fibre, amino acids, minerals, vitamins, Phenolic compounds but amidst that protein is the one compound that stands out of the lot. Apart from being useful in manufacturing of Bio-plastic films to being a key player in manufacturing of protein enriched GM crops, Protein also plays a key role in recycling of waste effluents and producing value of it are few of its varied roles.
